What is your 'favourite' aspect of scientific epistemology?

Alright. Credit where, credit's due, it was WarK's idea, discussed with me in the LoR chat. :)

The way he asked the question was "what is your favourite 'thing' about science"? I have rephrased the question somewhat. However, it boils down to the same basic question:

What part of the scientific mode of inquiry do you find most attractive as an epistemological theory? There are a couple of quotes here that I would have set as my signature, (and in the following format) were it not for the character-limit. Is there any means for me to do this? :)
