I've been playing around with that for a while and I noticed these large gashes on the picture when you scroll over to the X Ray scale (Hard not to notice to be completely honest). Is this something to do with X Rays or is that just the picture or something?

This is not due to actual features in the x-ray spectrum of the sky. The features are caused by missing data due to gaps in the scanning pattern of the survey. In this case, it looks like the data came from the ROSAT All-Sky Survey. Those sinusoidal arcs would actually appear as straight lines if those maps were in equatorial coordinates rather than galactic coordinates. Hope this clears things up.

I share of the same opinion, it is missing data rather than anything in particular in that region of space.

Actually those black gaps are explained in their official Quick Tour video (same as what Nelson said):

Cool website btw.
